  • 400g Maris Piper potatoes - Chopped into 2.5cm chunks
  • 250g cauliflower - Broken into small florets
  • 125g frozen peas
  • 1 onion - Finely chopped
  • 2 cloves garlic - Minced
  • 5cm piece of ginger - Grated
  • 1 fresh green chili - Finely chopped
  • 1 tsp cumin seeds
  • ½ tsp fennel seeds
  • 1 tsp garam masala
  • 1 tsp ground coriander
  • ½ a lemon - Juice
  • ½ bunch of fresh coriander - Finely chopped

For the Dough

  • 550g plain flour - Plus extra for dusting
  • ½ tsp baking powder
  • 2 tsp ajwain seeds (optional)
  • Groundnut oil or vegetable oil

Making the Dough

  1. In a large bowl, combine flour, baking powder, a pinch of salt, and ajwain seeds (if using).
  2. Rub in the oil until the mixture resembles breadcrumbs.
  3. Gradually add cold water, bringing the dough together with your hands.
  4. Knead into a smooth dough, adding more water if needed.
  5. Cover with a damp cloth and let it rest for about 30 minutes.

  8. Let the mixture cool completely before adding chopped coriander.
